This coffee from Guatemala is a really sturdy cup that can stand up to the coldest winter morning, yet still have a sweetness and complexity that mark a great Guat. This coffee starts off with a heavy dose of walnut richness that is brought forward by a silky yet heavy body. As the coffee gets into the super drinkable temperature range look for a juiciness to begin to pop. The sweetness of apples really permeates the cup for a refreshing end that will leave you wanting more. This is a cup that you will wish you had more of as soon as you finish the last step.
Don Aurelio's farms are located in the Hoja Blanca area of Huehuetenango. This region, located in the Northern reaches of Huehuetenango at the border with Chiapas, Mexico is called Cuilco. The Villatoro family manage a few farms in this region.with Aurelio Villatoro overseeing the wet mill, and his nephew Antonio helping to manage much of the day to day at the farms. n this area coffee tops out about 1750 meters due to the colder climate here. Bourbon is the dominant cultivar grown, but Caturra is also planted here, a cousin of Bourbon.
